THE BEST GUACAMOLE RECIPE

Guacamole is an avocado-based sauce that originated with the Aztecs in Mexico. It is traditionally made by mashing ripe avocados with a molcajete (mortar and pestle) with sea salt.
While there are many variations, traditional Mexican guacamole has only a few ingredients.  We share with you this recipe to prepare the best guacamole.

INGREDIENTS
4 Avocados
1 Tomato
1 Red Onion
1 bunch Cilantro
½ Serrano Pepper
¼ clove Garlic
Juice of two limes
Panella cheese
Salt and Pepper

METHOD
To begin dice tomatoes and onions. Mince Serrano pepper, garlic and cilantro. Place all ingredients on the side until ready to use. Cut avocado in half and remove seed and spoon out into a molcajete or medium size bowl. Mash avocado until almost smooth leaving some lumps for texture. Fold in other ingredients and season to taste with salt and pepper. Serve in favorite bowl or in molcajete with basket of tortilla chips. Grate or crumble panella cheese on top of the guacamole for an added touch.

Now enjoy!

Top Attractions in Los Cabos

Cacti Mundo, San José del Cabo, Los Cabos
The Cacti Mundo ("Cactus World") botanical gardens in San José del Cabo collect this plant group all in one place and are just the ticket for everything you want to know about cacti and succulents. The facility displays nearly 5,000 species of plants from all over the world, including many rare cacti native to Baja.
Iglesia de San Ignacio Kadakaamán, San Ignacio, Baja Sur.

It is a 1728 house of worship dedicated to the Jesuit order's very own founder, St. Ignatius Loyola, complete with elaborate facade. The structure underwent extensive restoration in the 1970s, and an active worship schedule keeps this a living, breathing church, rather than a musty museum piece.

Land's End, Cabo San Lucas, Los Cabos
The sight of the towering granite formations here lets you know that you've arrived at the tip of the Baja Peninsula. El Arco ("the arch") has become Los Cabos' most iconic symbol. Yet all the sleek hotels and shopping malls nearby can't deflect from the end-of-the-world feel you get when you arrive.

Malecón, La Paz, Baja Sur

The marina boardwalk in Cabo San Lucas head three hours north to the seaside promenade in southern Baja's largest city. This is urban renewal at its best, with attractive landscaping for the entire 5 km (3 mi) of the malecón's length. The walkway comes alive as evening approaches and residents throng the walkway for their evening paseo.

Parque Nacional Marino Cabo Pulmo, Cabo Pulmo, Baja Sur
The 25,000-year-old coral reef here is the only living coral reef on North America's west coast. Its eight reef fingers attract more than 2,000 different kinds of marine organisms, including almost 250 species of tropical fish. Toss in the sunken wreck of a tuna boat nearby and you have one of Baja's top snorkeling and diving destinations.

Valle de Guadalupe, near Ensenada, Baja Norte
You may know about Corona beer, tequila, and margaritas, but did you know Mexico had a wine industry? An anomaly in Baja's desert climate produces the Guadalupe Valley, a cooler, Napa-like pocket that cultivates several varieties of grapes and produces some of the world's best (but not best known) wines. Many of the vineyards are open to tours and samplings, some to meals and overnight stays, and all, of course, to purchases.

Tortilla Soup Recipe: Yummy and Satisfying

Tortilla Soup Recipe

Step #1: Make the broth:

Chicken (legs, wings and neck)
1/2 an onion
Cilantro
Salt & Pepper
Boil the ingredients above to make the chicken broth, then remove the chicken and cilantro. Of course, you can also purchase commercially prepared broth. I have made my soup with it on many occasions.

Step #2 Flavor the Oil with Garlic

Next take an entire garlic head and peel off the outer skin. Add 1 ounce of olive oil to a large saucepan and turn on medium heat. Toss in the garlic head and saute 3-5 minutes, until the garlic head turns brown. Remove the garlic, keep the oil and change the setting to low heat.

Step #3 Add Flavor to the Stock for the Tortilla Soup Recipe

To the oil, add:

3 chopped tomatoes
1 small chopped onion
3 or 4 huajillo chiles with seeds and veins removed (also spelled guajillo chiles)
1/4 bunch of Epazote (a dried mexican spice found in specialty stores) or cilantro
12 large tortilla chips
1 - 4 ounce can of tomato paste
4 cups of the chicken broth made earlier or the same amount of store-bought broth
Cook everything for about 20 minutes, stirring frequently, then mask it in a strainer and put the broth in a clean pot.

Step #4 Combine Ingredients, Simmer and Eat

Combine tomato puree and strained soup. Salt and pepper to taste. Heat to a boil and simmer for 10 minutes. Serve with condiments such as tortilla strips, mozzarella or mexican cheese, sour cream, huajillo chiles (cut into strips), avocado and lime juice.
